whipped chocolate cream cheese buttercream

Ingredients
  • 8 oz cream cheese, softened
  • 2½ sticks unsalted butter, at room temperature
  • 2½ c (284 g) powdered sugar, sifted
  • ¼ c dark cocoa powder (for a rich, dark brown)
  • 12 oz 40% chocolate, melted and cooled
  • 2 tbsp corn syrup (optional*)
  • pinch of salt
Instructions
  1. Beat the cream cheese on medium speed until smooth, then add the butter and mix on medium speed for 3 minutes.
  2. Add the sifted powdered sugar and mix to combine. Add the melted chocolate, cocoa powder, salt and corn syrup, if using. Beat on medium speed until fluffy and smooth. Store in an airtight container in the fridge for 3 days or freeze for up to 3 months.
  3. *the corn syrup adds a glossy finish to the buttercream but can absolutely be omitted. Add an additional 2 tbsp powdered sugar (or to taste) in its place
