dark chocolate, lavender and earl grey ganache

Ingredients
  • 1 c heavy whipping cream
  • 3 earl grey tea bags
  • 7 oz good-quallity dark chocolate
  • 4 drops lavender extract, or to taste
Instructions
  1. Scald the cream in a small pot over moderate heat, swirling occasionally. Remove from heat once small bubbles appear in the center. Steep the tea bags in the hot cream for 10 minutes, then squeeze the excess liquid from the tea bags and discard them.
  2. Melt 7 oz dark chocolate, then whisk in the cream and the lavender extract.
